Ingredients 50ml olive oil 6 beef short ribs (about 500gm each) 1 each onion and carrot, finely chopped 2 garlic cloves, crushed 250ml red wine 400gm canned crushed tomatoes 500ml veal stock 2 thyme sprigs Instructions Preheat oven to 150C. Heat oil in a frying pan over medium-high heat, add ribs, cook, turning once, until golden (3-5 minutes), remove ribs and set aside. Reduce heat to low, add onion, carrot and garlic, stir until golden and tender (8-10 minutes). Add wine, bring to the simmer, and add tomato and stock bring to the simmer. Add ribs and thyme, cover, braise in oven until tender (2 ½-3 hours). Set ribs aside, strain liquid into a saucepan over medium heat (discard solids), and reduce to a thick sauce (15-20minutes). Just before serving add ribs and warm through. Parsley sauce ½ cup (loosely packed) flat leaf parsley 2 tbsp. rosemary, coarsely chopped Finely grated rind of 1 lemon ½ garlic clove, minced 60 ml (1/4) cup extra virgin olive oil Pound herbs, lemon rind, garlic and a pinch of salt in a mortar and pestle until a coarse paste forms, then stir in oil, spoon over hot ribs....
As Mother’s day approaches I feel the need to say a few words of thanks to my mother. Mum, you are a true inspiration; words cannot begin to describe my feelings of complete adoration that I feel for you. I am lucky, lucky to deserve a mother as loving and caring as you. From a very young age you taught me how to utilize the most important of emotions and how to let go of the most damaging. You taught me love, most importantly. Without love the world would be a bitter existence. You taught me forgiveness, as it may lead to disease. You used to say, “Allow your heart to soften and let your heart breathe”. I could only let go of all my anger, all my resentment because of your calming soft words of love and compassion. I remember you saying “My daughter does not have a negative bone in her body; she does not feel jealousy or nastiness, not ever.” From a little girl, I listened to these words, as the truth and as a result, to this day, I am not an angry, jealous, or envious person. I have grown to be loving, happy and encouraging of all. I love the woman I have grown to be. I am full of compassion, empathy, adoration, respect and most importantly love, just like you! For starters I want to tell you all that I am extremely excited about this new adventure!
I recently went to Sydney and spent an entire week seeking inspiration on the health and beauty front. I feel so incredibly inspired and feel so lucky to be alive and by this I mean living to my greatest potential and to appreciate what we have here in Warrnambool.
The pace in which everybody travels in Sydney is intense. I was very aware of how much time the people of Sydney invest in their daily routine and just how much they fill into it. Most people are just getting home to eat dinner at around 9pm. There is a lot of commuting, and forever waiting for a train!
I have just been to Sydney for a week and what a blast! I spent the first three days with the lush German company Babor where I had training in product, the ingredients and the treatments. The company Babor also supply a French hair care range called j.f. lazartigue which is absolutely divine!
The following days in Sydney were spent shopping for gorgeous furniture and gift ware for the salon. The pieces that I have purchased are ultra girly and feminine. For all my lovely ladies, when you come visit for your appointment prepare to be dazzled!
